Milled rice, commonly known as pauna rice, purchased from the
Local market, Ludhiana, Punjab were considered for preparation of
calcium fortified rice. Calcium chloride (SD Fine Chemical Ltd,
Mumbai, India), due to good bioavailability, low cost and high
percentage of calcium (Flynn & Cashman, 1999) was used as a
source of calcium for fortification of rice in the present study. Calcium
fortified rice was prepared following two techniques i.e.
soaking or spraying followed by drying
