In order to determine the kind of lactobacilli that grow
during the fermentation of kimchi, a diluted solution of
kimchi was inoculated onto MRS agar plates. The counts
of lactobacilli increased exponentially from the initial
count of 2.00–9.56 log cfu/g in 6 days. Those colonies
showing variations in appearance under the microscope
were selected for the identification. For the purification
of these isolates, the streak plate technique was used and the streaking was repeated
three times for each inoculum.
