It is advantageous in terms of its negligible cost and energy requirement. On the other hand, it has many disadvantages like being a slow and labor intensive process. In addition, during drying, products can be polluted from dust, dirt, insects, animals or microbial contamination and they are unprotected from environmental conditions like rain or storm.
