2.6.1. Determination of alcohol content and soluble solid content of
H. erinaceus wine and vinegar
The alcohol content was determined using the specific gravity
method with a hydrometer. The soluble solids content was determined
at 20 C with a refractometer (RA-250WE, Kyoto electronics,
Kyoto, Japan). All measurements were conducted in triplicate and
reported as Brix.
