A technique for extracting TPCs from milk from different species
and quantifying them using the Folin–Ciocalteu method has been
developed. According to validation testing, the method presents
acceptable linearity, repeatability, reproducibility, recovery, limits
of quantification and detection. TPC results obtained from the milk
of different mammals (cow, goat, sheep and human) indicate a
high variability among species and among members of the same
species. The largest amount of TPCs was found in the milk from
sheep, compared with the TPC content of milk from the other
species.
