Ascorbic Acid Concentrations in Orange Juice Using Different Storage Methods
Abstract:
Citrus fruits such as oranges contain high vitamin C (ascorbic acid) levels. These fruits are essential dietary supplements that provide nutritional values and health benefits to its consumers. Vitamin C is also a valuable food source that could prevent the dreadful disease of scurvy. Studies have been conducted to measure the ascorbic acid levels from citrus fruits such as oranges. Moreover, previous studies have also reviewed the factors that can influence an orange’s vitamin C content. It has been proven that citrus fruits can lose vitamin C content due to their storage methods. However, there are possible secondary chemical reactions that may also influence the loss of their vitamin C due to their aging process. After completing this research project, it was noticed that the storage method can either speed up or slow down the ascorbic acid degradation rate. On the other hand, the vitamin C concentration did not vary among the four different storage methods: glass jar container, wrapping in wax paper, clothing bag and the control without any wrapping or container method.
