2.3. Effect of ‘‘annealing” treatment on thermograms
Rice flour (4.0–4.1 mg, 12% moisture) was mixed with distilled
water containing sodium azide (0.02% w/w for enzyme inactivation)
as above and the mixture was used to run DSC from 30 C
to 70 C (below the onset temperature of 75 C) at a heating rate
of 7 C min1. After annealing treatment, the sample was then
cooled to room temperature (22 C) and kept for 5 h prior to the
second run from 30 C to 110 C at a heating rate of 7 C min1.
