Pyruvate is converted to ethanol in two steps:
Pyruvate loses carbon dioxide and is converted to the two-carbon compound acetaldehyde.
NADH is oxidized to NAD+ and acetaldehyde is reduced to ethanol. Many bacteria and yeast carry out alcohol fermentation under anaerobic conditions.
