In the past several years, research in nutrition and food science has focused on plant products with on plant products with nutrition such as chlorophyll protein and minerals and potential antioxidant activities such as carotenoids and flavonoids therefore wheatgrass was counted as one of them. In recent years, in some European and Asia countries, wheatgrass in the form of a ready-made juice or tablet is being consumed as a ‘health food’ including can be planted and drink freshly squeezed in the household. Therefore, this research was study on biochemical elements and analysis of the antioxidant activity in a rice variety native to Thailand. In addition It can also add value in the consumption of rice products of Thailand and promote the cultivation of rice too.
