2.1.2. Packaging
The 32 muscles were each divided into 18 steaks. Each treatment was assigned six steaks from each bird, thus each bird received all three treatments. The steaks were randomly assigned to the packaging treatments. The control samples were packaged in foamed polystyrene trays, which were covered with 10 micron Versafilm (Crown National, Montague Gardens, Cape Town, South Africa) with a moisture vapour transfer rate of 585 g/m2/24 h/1 atm, O2 permeability 25000 cm3/m2/24 h/1 atm and a CO2 permeability of 180,000 cm3/m2/24 h/1 atm, was used for the overwrap treatment.
The MAP samples were packaged in PET (92.31%) and EVA-PE (7.69%) trays (1.85 H2O (v) g/m2/24 h and 6.48 O2 cm3/m2/24 h), sealed with a high barrier film with a moisture vapour transfer rate <5 g/m2/24 h/bar, O2 permeability <8 cm3/m2/24 h/bar and a CO2 permeability <40 cm3/m2/24 h/bar. A TS 1200N fully automated tray sealer (VC999 Packaging Systems Ltd., United Kingdom) was used to flush and seal the trays with 70:30, O2:CO2 (oxygen MAP) and 70:30, N2:CO2 (nitrogen MAP) (Freshline, Air Product, South Africa).
