Oligosaccharides indicated by the sugar analyses are thought to be the intermediates of the hydrolysis products from starch and other polysaccharides. Further studies are in
progress to determine the hydrolysis of cellulose and hemicellulose during storage of OPT and activities of enzymes involved. The decrease of free sugars after Day 60 is mainly
caused by microbial infections. Although about 5 cm from the end of the log was trimmed prior to the disc cutting, fungal penetration was observed after prolonged storage.
