Growth rate for hams containing EOs of garlic, and
thyme (red)were not significantly different (P N 0.05) from the control
ham. However, hams containing EOs of oregano and cinnamon cassia
showed a reduced growth rate significantly (P ≤ 0.05) by 0.076 and
0.042 ln CFU/g/day, which were equivalent to 19 and 10% of growth inhibition,
respectively (Table 3).
