2.4. Risk calculation
Following the calculation of the final score for each block, the results were analyzed to assess the risk to food safety. The risk was calculated for each block using FMEA analysis . FMEA is a systematic process meant for reliability analysis. It improves operational performance of the production cycles and reduces their risk level. By using FMEA the risk was calculated as ratio of three coefficients: significance of audit criteria for food safety which reflected severity of the nonconformity effects (S), the frequency of the nonconformity occurrence based on audit evidence (O) and detectability of the nonconformity (D). Each coefficient was assigned value in the range from 1 to 10 and the relative risk index (R) was calculated which is shown in simple equation.
