FMEA is often used in food industry as auxiliary method to establish critical control points (CCP) during the implementation of HACCP system New application of FMEA is to use it for the interpretation of the audit's outcomes which may enable precise assessment of food safety risk during verification of HACCP system. The aim of the study was to design the HACCP system audit method which allows precise assessment of the system functioning in practice. The method was based on specially elaborated audit questionnaire, covering all HACCP steps and principles, associated with analysis of audit findings by FMEA.
