Ideally one would want to evaluate the inherent trade-off between taste and health preferences for different consumer groups with one model, but for this analysis data constraints required the use of two different samples to evaluate the effect of health preferences on consumer behavior. Our combinational approach does provide informa- tion above and beyond traditional demand studies and is consistent with recent trends in consumer research that favor mixed-method designs (Erzberger and Kelle 2003). The comparative analysis of category-level meat demand using complementary analytical methods demonstrates the value of mixed-method approaches for managers and policy makers.
