Food composition data are necessary
to be considered from a nutritionist’s
viewpoint. It provides valuable information
of nutritive value of the food products.
In addition, these data can be used as
nutritional standard or as the basis
recommendation for Government’s health
policy. Previous reports including this study
have verified the chemical composition of
commercial Thua Nao as concluded in
Table 3. This is required for the benefit of
the nation and its own people. The
development of the product can also be
improved in an expectation that the
nutritional quality would be better. Thua
Nao products in this study appear to be a
good protein source based on protein content and potent to antioxidant diet food
with the great contents of antioxidant
phytochemicals and their strong
antioxidant activities. Further work on
development of Thua Nao nutritive quality
using pure starter culture is being
undertaken and the availability of these data
is thus important as standard values.
