In addition, a formulation without any polymer was also prepared to be used as a control. Rheological and mechanical/textural properties of the corresponding dispersions were investigated. The rheological assessment was carried out by analyzing continuous shear flow, creep-recovery and dynamic oscillatory tests. Penetration and compression tests were performed using a texture analyzer. The effects of experimental parameters (probe type and speed of displacement, diameter of the container) on the textural properties of the emulsions were examined.Rheological and textural data were then statistically analyzed thus allowing to evidence correlations between both approaches and to highlight the effects of incorporating the different polymers.
