Niven Junior,
Jeffrey and Corlett Junior (1981) found that histamine-forming
microorganisms isolated in his study were mesophilic bacteria
from the Enterobacteriaceae family, and according to MacFaddin
(1990), Enterobacteriaceae bacteria are Gram-negative,
catalase-positive, and oxidase-negative.
