Electrophoretic and immunological protein-based methods have
been extensively used for the authentication of fish species (Asensio
et al., 2003; Rehbein, 1990; Tepedino et al., 2001). In fact, isoelectric
focusing (IEF) was adopted by the AOAC in 1990 as the official validated
method for fish species identification. Limitations of these classical
protein-based methods include, among others, very laborious
and time-consuming procedures and the lack of stability of some proteins
during food processing
