According to Table 4, the pulp oil was significantly more stable than the seed oil (45.97 and 24.19 h, respectively). However, both showed a significant oxidative stability index when compared with soybean oil under the same conditions of analysis (16.79 h) ( Farhoosh, 2007).The antioxidant capacity of the seed oil (83.49%) in the DPPH•kidnap was significantly higher than in the pulp oil (22.19%). This last one presented DPPH•scavenging capacity similar to sunflower oil, which showed 23.80% (Siger et al., 2008). Luzia and Jorge (2013)evaluated the seeds of Annona crassiflora Mart. fruit and found
