Regarding HPP, it has been reported that small molecules, such as
vitamins, are minimally affected when samples are treated at mild
temperatures (Balci and Wilbey, 1999). Accordingly, we found no
changes in either the vitamin C or the ascorbic acid contents of
milk after HPP, with respect to untreated samples (Table 2). This
better ascorbic acid retention in food treated with HPP than in food
receiving conventional thermal treatments was also reported by
Patras, Brunton, Da Pieve, and Butler (2009), but not by Plaza
et al. (2006) or Sánchez-Moreno et al. (2005).
