The effect of recipe and process variables on VTEC reductions at other non-refrigerated temperatures
has been little studied. Storage at ambient temperatures has been
shown to provide increased VTEC reductions although the mechanisms
explaining this are not completely understood (Calicioglu et al.,
2001; Chikthimmah and Knabel, 2001; Faith et al., 1997; Nissen and
Holck, 1998).
