MAP were gas flushed using a combination of gases consisting
40% CO2, 30% O2 and 30% N2 in vacuum pouches (70 mm
thickness, water vapour transmission of 0.5–0.6 g per 254 cm2
at 37.8 8C, 100% relative humidity, 24 h; oxygen transmission
of 3–6 cm3 per m2 at 4.4 8C, 24 h)
