Partial least squares regression (PLS) (Fig. 2) was used to
determine the sensory attributes important to the overall acceptance of apple juices by consumers. A model of one component was
obtained, where the regression explained 84% of the mean values of
acceptance (Ydata) and 55.9% of the average values of sensory attributes (Xdata), being reported with aQ

indicating a satisfactory quality of the model.
