The modeling was performed in the same way for all conditions
of pH and temperature studied, both for folate, sugar and acid diffusion
from spinach and green beans. An example is presented in
Fig. 2, diffusion of folates for spinach at pH 7 and 45 C (A) and
for green beans at pH 7 and 65 C (B), where lozenges represent
experimental data and the line represents the diffusion model.
