3. Results
Industrials chains for both spinach and green beans had some common steps. In both, a washing step precedes a blanching step. However, the times used for washing and blanching are different for the two industrial chains. The washing time for spinach is 1–3 min and 30–60 s for green beans with a similar mode of washing (aspersion at 15–25 °C). The blanching mode is different for spinach (only aspersion) and for green beans (aspersion or immersion) with the times and temperatures also being different, from 90 to 95 °C during 70–120 s for spinach and from 85 to 95 °C during 4–8 min for green beans. The industrial chains also present specific steps such as freezing during 30–60 min from −30 to −18 °C for spinach and sterilisation during 6–15 min from 125 to 130 °C for green beans.
