folate conjugase from rat plasma. In a trial experiment, we evaluated the effectiveness of the chicken pancreas conjugase treatment with grape must that had 12% v/v alcohol added. A specific conjugase derived from chicken pancreas was used because it has been shown to be particularly effective with different food matrices(e.g. spinach, fortified bread and cereals) (Shrestha et al., 2000)Our results show that the folate content of the chicken pancreas extract in the presence of the alcohol containing grape must(11.3 ± 1.3 lg folic acid/l) was not significantly different (p > 0.05) compared to the non-alcohol grape must (10.6 ± 1.9 lg folic acid/l),thus indicating that the alcohol content present in wine would not interfere with the deconjugation process. The optimization study showed that 0.5 ml of chicken pancreas extract (5 mg/ml) was adequate to liberate folate from 1 ml of a white and red wine, respectively(Table 1)
