In the food industry, since the processing, storage and transportation
of the starters are usually operated at lowtemperatures, the
activity of strains and the efficiency of production have to be challenged
by cold stress. This study reveals the protective role of GSH
against cold stress fromthe aspect of metabolic regulation and induced
multistresses control. With these enriched information, we put
forwardanovelway toimprove the coldresistanceof L. sanfranciscensis
cells using exogenous GSH, and thus focus on the gene reconstruction
of sourdough starter strains with certain functional elements. Meanwhile,
as GSH has already been approved for use in food, thisworkwill
likely further promote its application in functional food.
