analyzed in this study is given in Table 1. Additionally, p-values are
presented in the same table to evaluate if the reference values were
significantly different between conventional and organic cornmeal
samples for each of the parameters measured.
Average moisture levels obtained for conventional and organic
samples were 10.2 and 9.4%, respectively and these levels were in
accordance with the maximum level of 13% set by USDA (USDA,
2014). Based on the p value of 0.096, there was not a significant
difference between the moisture levels of the two groups.
Ash content of samples showed a very narrow concentration
range, with levels averaging 1.16 for conventional and 1.23 for
organic samples. These levels were within the maximum level of
1.37% (wet base) set by USDA (2014) and comparable to the 1.39%
previously reported for corn flour (Sahai et al., 2001). The level of
1.37% is the maximum level of ash content allowable in cornmeal
samples without discount being applied. Similar to moisture content,
there was not a significant difference between conventional
and organic sample groups (p > 0.05).
