The selected osmotically dehydrated sweet purple potatoes from preliminary studies will used in different packaging conditions for storage studies. A 150 g (per replication) of samples for each packaging will be stored in different packaging conditions such as LDPE Nylon package (T1), LDPE Nylon with vacuum package (T2) and glass jar (5’ height and 3.5’ diameter) (T3). LDPE Nylon packages will be in 8’ in height and 4’ in width. The occasional opening and closure (1 hr every day morning, afternoon and evening) of glass jar samples will be served as control (C). All the samples will be stored for the duration about 70 days and every 7 days of intervals, the samples will be measured of following quality determinations. The storage studies will be terminated when microbial growth on the sample reaches over the limit.
