2.6.3. Preference assays
A consumer preference assay (paired comparison test) was performed. Consumers were asked to choose between the control and pressurized kiwi purée samples, considering their “overall liking”, at the initial time after HPT and after 21 storage days in two sessions.
2.7. Statistical analysis
Significant differences between the control and pressurized purée samples during storage were determined using Statgraphics Centurion XV (StatPoint Inc., Rockville, Maryland), applying a two-way ANOVA using an LDS test for multiple comparisons (α = 0.05).
