The main reasons of encapsulation is
to isolate the core material from the deteriorating effects of
oxygen, retard the evaporation of a volatile core, control the
rate at which it leaves the microcapsule, improve the handling
properties of a sticky material, mask the taste or odor of the
core, isolate a reactive core from chemical attack, and, finally,
to dilute the core material when it should be used in only very small amounts (Shahidi and Han 1993; Gharsallaoui et al.
2007).
