and fruits) and the oldest preservative of vegetables, meat and
fish (Sievers and Swings, 2005). Different types of processes have
been introduced for its production. The traditional technologies rely
on the surface microbiota that is immobilized on different support materials
(such as beech-wood shavings) or it is floating on the surface of
ethanol containing substrates (Adams, 1985; Kersters et al., 2006). On
the contrary, the submerged processes contain microbiota dispersed
throughout the bioreactor (Ebner, 1982). In the submerged processes
the bacteria are constantly supplied with small air bubbles which contribute
to an efficient oxygen transfer and consequently very quick
(few days) oxidation of ethanol to acetic acid, a bioconversion that
takes a few weeks during the application of traditional technologies.
Although different kinds of vinegars have been described (such as kaki
and strawberry) (Sievers and Swings, 2005), the apple-, wine- and alcohol-vinegars
are the three most common vinegars available on the
European market. Basically, the ethanol produced by yeasts from any
sugar containing substrate is oxidized by acetic acid bacteria into acetic
acid. The biochemical aspects of this process have been well described
during the previous years (Matsushita et al., 1994; Thurner et al.,
1997): ethanol is oxidized to acetic acid in two sequential reactions
catalysed by alcohol dehydrogenase and aldehyde dehydrogenase,
both of these enzymes being located on the periplasmic side of the cytoplasmic
membrane and linked to the respiratory chain.
