PreparationofOriginalKombucha. Original kombucha was prepared using green, oolong, and black tea. In brief, 100gofsucrosewasdissolvedin800mLofdistilledwaterby maintainingthetemperatureat98°Cfor15min.Then,4gof thetealeavesweresoakedinthepreparedsugarsolutionand heated at 98°C for 12min. Furthermore, the tea leaves were filtered out after soaking, and the solutions were cooled down to 25°C. Furthermore, the solution was inoculated with 600ml of kombucha start culture, and fermentation wascarriedoutfor15daysat25,30,and35°Ctemperatures, respectively.Sampleswerecollectedandanalyzedonadaily basis during fermentation.
