On days 1, 4 and 7 of simulated retail display,meat surface colour was measured through overwrap-polyvinylchloride film at three random locations on each sample using a Minolta Colour Meter (Illuminant D65, 1 cm diameter aperture, 10° standard observer; CR-300; Konica Minolta Photo Imaging Inc., Mahwah, NJ, USA) calibrated using a standard white tile.
