Similar observation reported by Pan and Staden [29] demonstrated
that 20% of sucrose was hydrolyzed by autoclave at 121 ◦C for
20 min. Thus, it is important to know that the process for preparing
sorghum syrup will affect the final syrup sugar composition. If
sucrose is desired, then sterilization through autoclave is not a
good choice. Otherwise, autoclave can be used as an alternative to
invertase to hydrolyze sucrose to fructose and glucose. However,
it needs to be noted that energy is consumed in order to hydrolyze
sucrose through autoclave.
