Ascorbic acid can inhibit enzymatic browning in fresh fruit
and vegetables through reduction of o-dihydroxyquinones, by chelation
of divalent metal ions and by lowering the pH of tissues below
the optimum range for PPO. The optimum pH is 7 for PPO
extracted from Jerusalem artichoke tubers (Tchoné et al., 2005).
