Drying in mechanical dryers presents some advantages
over sun drying on patios (more used on Brazilian
farms): drying time reduction, decrease in climatic interferences
in the coffee quality, reduction in patio area and
associated labor. On the other hand, it has higher costs
of energy and equipment (Finzer, Limaverde, Freitas, &
Limaverde Ju´ nior, 1998). According to Vincent (1987)
the dryers most commonly used in coffee drying are
vertical dryers.
