1. Cook turkey according to packet instructions. Carefully remove foil from turkey 20 minutes before end of cooking. Brush combined honey, mustard and soy over roast. Return to oven, brushing occasionally with pan drippings. Remove from oven. Cover with foil to keep warm.
2. To prepare spring vegetables, boil, steam or microwave carrots and zucchini, separately, until tender. Drain well. Melt margarine in a frying pan. Add mushrooms, and spring onions. Cook over a high heat for 2 minutes. Add carrots, zucchini and remaining ingredients. Stir until boiling and sauce thickens.
3. Serve roast turkey sliced with spring vegetables.
