Ingredients
For the Pink Grapefruit Cupcakes:
1/2 cup unsalted butter (1 stick), room temperature
1 cup white sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/4 cup freshly squeezed grapefruit juice
2 T grapefruit zest
For the Vanilla Buttercream Frosting:
3 egg whites
3/4 cup sugar
1 1/2 tsp vanilla extract
pinch of salt
1 cup unsalted butter (2 sticks), room temperature
Method
For the Pink Grapefruit Cupcakes:
1.Preheat oven to 350 degrees F.
2.Line a cupcake tin with liners or grease very well with butter.
3.In a large bowl or stand-mixer bowl cream together butter and sugar.
4.Add in eggs and vanilla extract and mix until just combined.
5.Add in flour, baking powder and salt and mix until just combined.
6.Add in milk, grapefruit juice and grapefruit zest and mix until just combined.
7.Divide batter evenly among tins (will make 12) and bake for 20 minutes.
8.Remove from oven and let cool completely (remove from tin after 20 minutes to cool on a wire rack).
For the Vanilla Buttercream Frosting:
9.In a large bowl beat egg whites,vanilla, sugar and salt with an electric mixer or stand mixer for 12-15 minutes or until eggs hold stiff peaks.
10.Incorporate butter into frosting, 1 stick at a time.
11.Continue mixing for another 3-5 mins or until frosting is thick but not clumpy (if clumpy, keep mixing).
