Aqueous mixtures of gelatin and -carrageenan were prepared
by mixing starting solutions of both components at 30 ◦C in shares
determined by the biopolymer (stabiliser) concentration in emulsions
under investigation. Gelatin concentration in an aqueous
phase was 0.5% (w/w) and -carrageenan concentration varied in
the range from 0.005 to 0.07% (w/w). Therefore, the mass ratio of
biopolymers, -carrageenan/gelatin w/w ratio, Z, was from 0.01 to
0.14 (gcar/ggel). pH values of aqueous mixtures were 5.2–5.4. Under
the studied conditions, both gelatin and -carrageenan do not gel
in their aqueous solutions.
