If water is not necessary in the packing process, do not use it. Wetting the
produce greatly increases the likelihood of damage by post-harvest diseases. If the
produce must be washed to remove soil, there is no alternative to wetting.
Hydrocooling also necessitates wetting the produce, although other methods, such
as forced-air cooling, may be a viable option in some cases. When water is
necessary in packing lines (for example, in dumping tanks, flumes, or a
hydrocooler), always treat it to reduce the risk of disease.
