● Aspergillus and Penicillium, and a few from Rhizopus and
Mucor, have been used for beneficial purposes in food
● Strains used should not produce mycotoxin
● Aspergillus oryzae is used to produce sake, soy sauce,
miso. It also produce food enzyme such as amylase and
protease
● Penicillium roqueferti is used to produce blue cheese
● Penicillium camemberti is used in Camembert cheese
production
