Our results show that the composition of Argan oil prepared from fruits collected from the same location does not vary sig-nificantly over a three-month period. This is the indication that he synthesis of the triacylglycerols is already complete at this stage. However a detailed investigation of oil composition clearly showed that Argan oil extracted from fruits collected in July from fully ripe fruits, differs on the level of minor lipid components. In turn, this affects chemical characteristics of the solvent extracted oil, with improved oxidative stability and shelf life. This influence of ripening could also result in differing or improved properties of the corresponding cold-pressed oils, suitable for industrial use in cosmetics, compared to oil from fruits collected earlier during the season. Although the considered period at end of ripening stage do not seem to act on oil production in the kernel, but only on its minor lipid components – these being important ones from the pharma-cological stand point – the influence of ripening on the pulp needs to be investigated, given the visual changes noted on the outer part of the fruit during that period.
