5.5. Reuterin
Reuterin is produced during stationary phase by the anaerobic growth of Lactobacillus reuteri on a mixture of glucose and glycerol or glyceraldehyde. It has a general antimicrobial spectrum affecting viruses, fungi and protozoa as well as bacteria (Axelsson et al., 1989; Chung et al., 1989). Its activity is thought to be due to inhibition of ribonucleotide reductase (Dobrogosz et al., 1989).
