Absorbance was measured at 532 and 600 nm using a Lambda 25
UV/VIS spectrometer (PerkinElmer) and the difference (A532-A600) was used as corrected absorbance values for turbidity. Lipid oxidation was expressed in milligrams of MalonDiAldehyde (MDA, Acros, New Jersey, USA) per kilogram of meat, according to a standard curve constructed by incubating 1 mL of different concentrations of MDA (0 to 5 nmol•mL−1 in extracting solution) with 1 mL of 80 mM TBA. The reported values are means of three samples for each condition.
