The intensity of this peak decreased with increasing carbon chain length, indicating the amount of complex formed between amylose and fatty acids followed the order of LA > MA > PA. This observation agreed well with XRD and DSC results. As expected, the peak at 1047 cm1 observed with WWS also disappeared. However, no new peak was observed for WWS–fatty acid samples, indicating that the formation of amylopectin–fatty acid complex was too little to be detected by FTIR.
