Recent studies at our laboratory have shown the presence of a broad-based population
of O. oeni strains in Tempranillo wines made at six wineries
in Castilla-La Mancha. The objective of this new study is therefore
to expand our knowledge of this issue by studying five different
wineries during two consecutive vintages. In that way we
can compare both the microbiota composition and the year-toyear
variability. These studies are particularly useful in order to
establish the existence of strains specific to oenological areas
and also to select the most representative ones for use as starter
cultures in vinifications carried out in that specific oenological
area.
