Sample preparation: Ten gram (10 g) each of raw and
samples blanched for 2, 4, 6… 16 min was macerated
with 70 ml of the 0.4% oxalic acid solution using a
mortar and pestle and filtered. A 1 ml of the filtrate
was taken with 9 ml of the standard dye solution into
a test tube and reading taken after 15 sec. The
concentration of ascorbic acid in the samples was
calculated from the standard curve.
