2. Materials and methods
2.1. Source of carcasses
The study was carried out using lean samples from the
leg joints of 69 lamb carcasses. They belonged to three
indigenous dairy breeds of sheep, which are the most
representative breeds in Greece: the Boutsko breed
(B), the Serres breed (S), and the Karagouniko breed
(K). For details on the growth and meat production
potential of these breeds see Zygogiannis et al. (1997).
All lambs were weaned at approximately 42 days of
age and were then reared under different nutritional
management.
